Risotto with Saffron for 4 people - special and very famous Italian Risotto, interesting for a first course.Cooking time 15 minutes

INGREDIENTS:
320 g Vialone Nano
1 glass white wine
Half an onion
Olive oil as it serves
0,8 liter of meat broth
pepper as it serves
1 packet and a pinch of pistils of saffron

 

HOW TO PREPARE THE RISOTTO

Finely chop the onion and melt olive oil as i serves on low heat, making sure you do not fry.Fry the onion for a few minutes.In this phase, remember to stir constantly the whole.Then add the rice and toast it well and then add the white wine. Let the wine evaporate completely and then pour 2 ladles of hot broth.Mix together all the time and, when the rice has absorbed the broth, pour another ones strictly hot.Repeat this simple operation to finish cooking.In the last 5 minutes of cooking, melt saffron in a little hot meat broth and mix the rice well.After cooking, stir the rice with grated Parmesan cheese and the remaining saffron and salt as it serves.
