Risotto with Amarone of Valpolicella for 4 people - interesting and special Risotto, ideal for an important first course.Cooking time 15 minutes
INGREDIENTS:
320 g Vialone Nano
60 grams of cheese Monte Veronese cheese, or Parmesan
Half an onion
50 grams of Italian olive oil
0,8 liter of meat broth
1/2 bottle of Amarone of Valpolicella
HOW TO PREPARE THE RISOTTO
Cooking apart Amarone of Valpolicella wineIn a saucepan with olive oil make the onion finely chopped.Add the olive oil and cook over low heat for about 6 minutes.Add the rice and toast over medium heat for a few minutes (stirring constantly).Slowly add half of Amarone, cooked before.
Continue cooking, stirring constantly with a wooden spoon, adding a little at a time, the hot stock, as they cook so requires.When the cooking is well advanced slowly add the remaining wine Amarone. At the end stir the risotto with olive oil and Monte Veronese cheese or Parmesan.Let stand for a few minutes, and then serve.
